Sydney Fish Market is hooking into its first spring and summer season at its new home in Blackwattle Bay.
There are “seafood-led” lunches and dinners overlooking Sydney Harbour and the city skyline and visitors can experience Sydney’s seafood culture through cooking classes at Sydney Seafood School.
SEAFOOD SECRETS
Sydney Seafood School has a state-of-the-art auditorium for up to 66 guests, and a contemporary cooking space for hands-on cooking experiences for up to 60 people.
There are lots of lessons to choose from, but this is my pick of three . . .
+ The Land and Sea session concentrates on Australia’s native flavours and is $198. Guided by experts, participants learn to cook with Australian seafood and native ingredients such as finger lime, lemon myrtle, saltbush, warrigal greens and pepperberry.
+ There’s a Singapore Chilli Mud Crab class for $225. Singapore’s most famous dish has long been one of the most popular at Sydney Fish Market too. Participants learn how to handle live mud crabs, use traditional spices and wield a wok.
+ The Italian Seafood Feast class will focus on technique, simplicity and quality ingredients. Participants will prepare cozze gratinate (grilled mussels), spaghettini con gamberi (pasta with prawn, lemon, herbs and chilli) and verdure ripassate in padella (leafy greens sauteed with chilli and garlic).
Participants cook in pairs at a shared workstation of four to six people.
Alongside the calendar of public cooking classes, guest chef appearances and seasonal programming offers even more ways to experience the venue.
